For our Venison prosciutto we use topside of Alpine deer.

We marinate it, gently smoke it over beech wood and air-dry it for three months.

It is rich, deep and gamy in flavor and very lean.

Ingredients: smoked venison, salt, spices, natural flavors, sucrose, dextrose, smoke, sodium ascorbate, sodium nitrite.
