Follow this advice to enjoy your Speck at its best:

Store vacuum-packed Speck in a cool, dark place or in the refrigerator. This way it will keep for several months. Remove Speck from the package a few hours before serving to let it develop its full aroma.

Store unpackaged Speck in a cool, dry place, ideally wrapped in a cloth or placed between two plates. It will stay fresh for several weeks.

Always cut Speck away from the hard rind and against the grain. This makes slicing easier and gives your speck a more delicate texture.
